Ingredients

  • 1 bunch Spring Onion
  • 1 Kg Indian Salmon (Rawas) Fish
  • 300 g Shiro Miso Paste
  • 80 g Soya Sauce
  • 500Ml Habit Toasted Sesame Oil Cold Presses
  • 500g Gochujang (Korean Chili Paste)
  • 50 g Honey
  • 250 g Jasmine Rice
  • 250 g Carrot
  • 1pc Avocado
  • 6 pcs White Eggs
  • 100 g Til
  • - Rice Vinegar
  • 250 g Cucumber

Instructions

  1. 1. In a small bowl, mix miso paste, soy sauce, sesame oil, chili paste, and honey to create the spicy miso glaze.
  2. 2. Marinate the salmon fillet with half of the miso glaze for 10-15 minutes, ensuring it's evenly coated.
  3. 3. While the salmon marinates, prepare the rice by reheating if pre-cooked, and set aside. Soft-boil the eggs by simmering them in water for 6 minutes, then cool in ice water, peel, and slice in half.
  4. 4. Heat a non-stick pan over medium heat, and cook the salmon skin-side down for 3-4 minutes. Flip and cook for another 3-4 minutes or until fully cooked. Brush with remaining glaze during the last minute of cooking.
  5. 5. In the same pan, lightly sauté the julienned carrot with a splash of rice vinegar for 1-2 minutes to soften slightly.
  6. 6. Assemble the bowl by placing the cooked rice as the base. Arrange the salmon, soft-boiled eggs, sautéed carrot, cucumber slices, and avocado on top.
  7. 7. Garnish with sesame seeds and chopped spring onion for added texture and flavor. Serve immediately and enjoy!
