Spiced Paneer Pilaf in Creamy Coconut Harmony recipe

Ingredients

  • 200 g Paneer
  • 250 ml Coconut Milk
  • 100G Cashews
  • 150 Gms Cloves
  • 500 ml Water
  • 1 kg Basmati Rice
  • 200 g Green Peas
  • 500 g Ghee
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Coriander Powder
  • 10G Salt
  • 250g Coriander

Instructions

  1. Step 1: Heat 1 tablespoon of ghee in a large pan. Add cumin seeds, cloves, cinnamon stick, and cardamom pods. Sauté until aromatic.
  2. Step 2: Add the soaked rice and sauté gently for 2 minutes. Add 2 cups of water, a pinch of turmeric, and salt as needed. Cover and cook on low heat until the rice is fluffy.
  3. Step 3: In a separate pan, heat the remaining ghee. Add cubed paneer and lightly sauté until golden brown. Remove and set aside.
  4. Step 4: In the same pan, add diced carrots and green peas. Cook for 5 minutes on medium heat.
  5. Step 5: Blend soaked cashews with coconut milk into a smooth paste. Add this to the cooked vegetables, along with red chili powder, coriander powder, and salt.
  6. Step 6: Simmer the curry for 5-7 minutes until thickened. Stir in sautéed paneer and cook for another 2 minutes.
  7. Step 7: Serve the Paneer Pulao with the Coconut Curry, garnished with fresh coriander leaves.
