Ingredients
- 200 g Paneer
- 250 ml Coconut Milk
- 100G Cashews
- 150 Gms Cloves
- 500 ml Water
- 1 kg Basmati Rice
- 200 g Green Peas
- 500 g Ghee
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat 1 tablespoon of ghee in a large pan. Add cumin seeds, cloves, cinnamon stick, and cardamom pods. Sauté until aromatic.
- Step 2: Add the soaked rice and sauté gently for 2 minutes. Add 2 cups of water, a pinch of turmeric, and salt as needed. Cover and cook on low heat until the rice is fluffy.
- Step 3: In a separate pan, heat the remaining ghee. Add cubed paneer and lightly sauté until golden brown. Remove and set aside.
- Step 4: In the same pan, add diced carrots and green peas. Cook for 5 minutes on medium heat.
- Step 5: Blend soaked cashews with coconut milk into a smooth paste. Add this to the cooked vegetables, along with red chili powder, coriander powder, and salt.
- Step 6: Simmer the curry for 5-7 minutes until thickened. Stir in sautéed paneer and cook for another 2 minutes.
- Step 7: Serve the Paneer Pulao with the Coconut Curry, garnished with fresh coriander leaves.
