A fragrant and wholesome Jain-friendly paneer and millet pulao infused with aromatic spices, perfect for a balanced and satisfying lunch.
Ingredients
- 200 g Paneer
- 150 Gms Cloves
- - Bay Leaf
- 500 ml Water
- 200 g Green Peas
- 500 g Ghee
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 250g Green Chilli
- 300 g Ginger Paste

- 20 g Turmeric Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat ghee in a heavy-bottomed pot or pressure cooker over medium heat.
- Step 2: Add cumin seeds, cinnamon stick, cloves, and bay leaf. Sauté until the spices release their aroma.
- Step 3: Stir in the slit green chilies and ginger paste. Cook for 30 seconds.
- Step 4: Add the diced carrots, green peas, and green beans. Sauté for 2-3 minutes.
- Step 5: Sprinkle in ground coriander, turmeric powder, and salt. Mix well to coat the vegetables.
- Step 6: Drain the soaked millet and add it to the pot. Stir gently for 1-2 minutes to toast the grains slightly.
- Step 7: Pour in the water and bring to a boil. Lower the heat, cover, and let it simmer for 15-20 minutes or until the millet is cooked and water is absorbed.
- Step 8: In a separate pan, lightly pan-fry the paneer cubes in a teaspoon of ghee until golden on the edges.
- Step 9: Gently fold the paneer cubes into the cooked millet pulao.
- Step 10: Garnish with fresh coriander leaves and serve warm.
