- 250 g Mutton
- - Onion
- 250g Garlic
- 250g Ginger
- 250g Coriander
- 250g Green Chilli
- - Red Chilli
- 500 g Ghee

- 100 g Coriander Powder
- 20 g Turmeric Powder
- 100g Garam Masala
- 10G Salt
- 500 ml Water
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
Instructions
- Step 1: Heat mustard oil in a skillet until it smokes slightly, then lower the heat.
- Step 2: Add crushed garlic, grated ginger, and slit green chilies. Sauté until fragrant.
- Step 3: Add sliced onions and cook until golden brown.
- Step 4: Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and garam masala. Cook until the masala forms a thick paste.
- Step 5: Add the mutton pieces and stir well to coat them in the masala. Season with salt.
- Step 6: Cover and cook on medium heat for 20-25 minutes, stirring occasionally and adding water as needed.
- Step 7: Once mutton is tender and well-cooked, garnish with fresh coriander leaves.
- Step 8: For the pearl millet rotis, knead Bajra flour with water and a pinch of salt to form a soft dough.
- Step 9: Divide the dough into small balls and roll them into thin rotis using a rolling pin (or pat them by hand for authenticity).
- Step 10: Cook the rotis on a hot tava (griddle) until lightly charred and cooked through. Apply ghee if desired.
- Step 11: Serve the spiced mutton stir-fry alongside the pearl millet rotis.
