Spiced Mutton and Barley Stew recipe

Ingredients

  • 250 g Mutton
  • 500 Gms Pearl Barley
  • 250g Garlic
  • 250g Ginger
  • 100 ml Olive Oil
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 250g Coriander
  • 900 g - 1 kg Onion
  • 500 g Desi Tomato
  • 500 ml Water
  • 50 g Cumin Powder
  • 100 g Coriander Powder
  • 55 g Paprika Powder
  • 20 g Turmeric Powder
  • 50 g Black Pepper
  • 10G Salt

Instructions

  1. Heat olive oil in a large pot or pressure cooker on medium heat.
  2. Add the cinnamon stick and sauté for a minute until aromatic.
  3. Add the chopped onions, garlic, and ginger, and sauté until the onions turn golden brown.
  4. Add the mutton pieces and cook until they are lightly browned on all sides.
  5. Mix in the tomato puree, cumin powder, coriander powder, paprika, turmeric powder, and black pepper. Cook for 5 minutes, stirring occasionally.
  6. Add the soaked barley, water, and salt. Stir well to combine.
  7. Cover the pot and simmer on low heat for 40 minutes, or pressure cook for 20 minutes until the mutton is tender and the barley is cooked through.
  8. Adjust seasoning as needed and garnish with fresh coriander leaves before serving.
