Ingredients
- 250 ml Coconut Milk
- 150 Gms Cloves
- 500 ml Water
- Pcs Chings Masala Chicken Chilli
- - Onion
- 250g Garlic
- 250g Ginger
- 1 piece Coconut
- 250g Green Chilli
- 100 g Coriander Seeds
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- - Red Chilli
- 20G Curry Leaves
- 500 g Rice
- 10G Salt
Instructions
- Step 1: Heat 2 tablespoons of oil in a large pan. Add the cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté until aromatic.
- Step 2: Add the chopped onions and sauté until golden brown. Add ginger, garlic, and green chilies, sautéing for another 2 minutes.
- Step 3: Add the chicken pieces to the pan and cook until lightly browned. Stir in turmeric powder, red chili powder, and salt.
- Step 4: Blend the grated coconut, coriander seeds, black peppercorns, and a little water into a smooth paste. Add this paste to the pan and mix well.
- Step 5: Pour in the coconut milk and simmer for 25 minutes, stirring occasionally, until the chicken is fully cooked and the curry thickens.
- Step 6: Meanwhile, prepare the coconut rice. Heat 1 tablespoon of oil in another pan. Add curry leaves and sauté briefly. Add soaked rice and stir for a minute.
- Step 7: Add 2 cups of water and salt to the rice. Cook covered on low heat until the rice absorbs the water and is fully cooked.
- Step 8: Plate the coconut rice alongside the chicken curry and garnish with fresh curry leaves.
