Ingredients
- 20G Curry Leaves
- 250 ml Coconut Milk
- 1 kg Jackfruit
- - Red Chilli
- 250g Ginger
- 250g Garlic
- 250g Green Chilli
- 250g Coriander
- NaN Kodo Millet
- - Mustard Seeds
- 200 g Fenugreek Seeds
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
Instructions
- Step 1: Heat vegetable oil in a large pan or rice cooker on sauté mode. Add mustard seeds and allow them to crackle.
- Step 2: Add fenugreek seeds, curry leaves, green chilies, grated ginger, and minced garlic. Sauté until fragrant.
- Step 3: Stir in turmeric powder, red chili powder, and coriander powder. Cook for 1-2 minutes to toast the spices.
- Step 4: Add the jackfruit chunks and cook for 5 minutes, stirring occasionally.
- Step 5: Pour in the tamarind water and coconut milk. Bring the mixture to a simmer.
- Step 6: Stir in the soaked millet and adjust salt. Add 2 cups of water, cover, and cook for 20-25 minutes until the millet is tender and the stew thickens.
- Step 7: Garnish with chopped cilantro and serve hot.
