A comforting, protein-rich meal of spiced lentil stew (Varan) served with fluffy rice, infused with authentic Maharashtrian flavors.
Ingredients
- 20G Curry Leaves
- 500 g Toor Dal
- 500 g Rice
- 250g Green Chilli
- 250g Ginger
- 500 g Ghee
- 100 g Lemon
- 250g Coriander
- 100 G Asafoetida / Hing 100 G
- 500 ml Water
- 20 g Turmeric Powder
- 10G Salt
- - Cumin Seed
Instructions
- Step 1: Add the washed rice and 2 cups of water to the rice cooker. Cook until the rice is fluffy and set it aside.
- Step 2: In a separate pot, cook the soaked toor dal with 2 cups of water, turmeric powder, and a pinch of salt until soft. Mash lightly with the back of a spoon.
- Step 3: In a small pan, heat ghee. Add cumin seeds and let them crackle. Add asafoetida, slit green chilies, curry leaves, and grated ginger. Sauté for 1-2 minutes.
- Step 4: Pour this tempering over the cooked dal and mix well. Adjust the consistency with water if needed.
- Step 5: Simmer the dal on low-medium heat for 5 minutes. Adjust salt as required.
- Step 6: Serve the hot varan over rice. Garnish with fresh coriander leaves and a squeeze of lemon.
