Ingredients

  • 20G Curry Leaves
  • 500 g Toor Dal
  • 500 g Rice
  • 250g Green Chilli
  • 250g Ginger
  • 500 g Ghee
  • 100 g Lemon
  • 250g Coriander
  • 100 G Asafoetida / Hing 100 G
  • 500 ml Water
  • 20 g Turmeric Powder
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Step 1: Add the washed rice and 2 cups of water to the rice cooker. Cook until the rice is fluffy and set it aside.
  2. Step 2: In a separate pot, cook the soaked toor dal with 2 cups of water, turmeric powder, and a pinch of salt until soft. Mash lightly with the back of a spoon.
  3. Step 3: In a small pan, heat ghee. Add cumin seeds and let them crackle. Add asafoetida, slit green chilies, curry leaves, and grated ginger. Sauté for 1-2 minutes.
  4. Step 4: Pour this tempering over the cooked dal and mix well. Adjust the consistency with water if needed.
  5. Step 5: Simmer the dal on low-medium heat for 5 minutes. Adjust salt as required.
  6. Step 6: Serve the hot varan over rice. Garnish with fresh coriander leaves and a squeeze of lemon.
