Spiced Coconut Chicken with Jeera Rice recipe

Ingredients

  • 250 ml Coconut Milk
  • 500 ml Water
  • Pcs Chings Masala Chicken Chilli
  • - Onion
  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 100 g Coriander Powder
  • 50 g Cumin Powder
  • 20 g Turmeric Powder
  • 100g Garam Masala
  • 20G Curry Leaves
  • 1 kg Basmati Rice
  • 10G Salt
  • 250g Coriander

Instructions

  1. Step 1: Heat 2 tbsp of vegetable oil in a deep pan. Add cumin seeds and allow them to splutter. Add finely chopped onion, garlic, and ginger, and sauté until golden brown.
  2. Step 2: Add turmeric, coriander powder, cumin powder, and garam masala. Stir for 1-2 minutes until the spices are fragrant. Add curry leaves and green chilies.
  3. Step 3: Add the chicken pieces and cook on medium heat for 5-6 minutes until lightly seared. Pour in the coconut milk and simmer for 15-20 minutes. Adjust salt to taste.
  4. Step 4: While the chicken cooks, heat 1 tbsp of oil in another pot. Add cumin seeds and let them crackle. Add soaked basmati rice and water. Season with salt and cook covered on medium heat until rice is fluffy and water is absorbed.
  5. Step 5: Serve the spiced coconut chicken over the jeera rice, garnished with fresh coriander leaves.
