- 250 g Carrot
- 100 g Coriander Leaves
- 1 bunch Spring Onion
- 250 g Cucumber
- - Chicken Breast
- - Urban Platter Sichuan Peppercorns
- 90 g Dark Soy Sauce
- 500 g Sugar
Instructions
- 1. Gather all ingredients: 300g boneless chicken breast, 1 tbsp Sichuan peppercorns, 2 tsp soy sauce, 1 tsp black vinegar, 1 tsp sesame oil, 1 tsp sugar, 1 tsp chili oil (optional), 1 cucumber (sliced thinly), 1 carrot (julienned), 2 spring onions (chopped), 1 small bunch of cilantro (chopped), and 1 tbsp roasted peanuts (crushed).
- 2. Dry roast the Sichuan peppercorns in a pan over medium heat for 1-2 minutes until fragrant. Grind them into a coarse powder using a mortar and pestle or spice grinder. Set aside.
- 3. Bring a pot of water to a boil. Add a pinch of salt and the chicken breast. Cook for 10-12 minutes or until fully cooked. Remove the chicken, let it cool, and then shred it into bite-sized pieces.
- 4. In a small bowl, mix the soy sauce, black vinegar, sesame oil, sugar, chili oil (if using), and half of the ground Sichuan peppercorns to create the dressing. Adjust seasoning to taste.
