A classic Bengali delicacy, Shorshe Ilish combines the rich flavors of Hilsa fish with a pungent mustard sauce, balanced with subtle heat and a hint of sweetness.
Ingredients
- 1 Kg Hilsa Fish
- - Black Mustard Seeds(Rai/Mustard) - 50gm
- 100 g Yellow Mustard Seeds
- 500 ml Water
- 200 ml Mustard Oil
- 250g Green Chilli
- 20 g Turmeric Powder
- 10G Salt
- 500 G Sugar
Instructions
- Step 1: Grind the soaked black mustard seeds, yellow mustard seeds, and 2 green chilies together into a smooth paste using minimal water.
- Step 2: Marinate the Hilsa fish pieces with turmeric powder and salt. Let it rest for 10 minutes.
- Step 3: Heat mustard oil in a pan until it reaches its smoking point, then reduce the heat.
- Step 4: Lightly fry the fish pieces on both sides for about 1-2 minutes each. Remove and set aside.
- Step 5: In the same pan, add the mustard paste, salt, sugar, and water. Allow it to simmer for 5 minutes.
- Step 6: Gently place the fish pieces into the simmering mustard sauce. Add the remaining green chilies and cook on low heat for 10 minutes, basting the fish with the sauce occasionally.
- Step 7: Turn off the heat and let the dish rest for a couple of minutes before serving.
