A classic Bengali delicacy, Shorshe Ilish combines the rich flavors of Hilsa fish with a pungent mustard sauce, balanced with subtle heat and a hint of sweetness.

Ingredients

  • 1 Kg Hilsa Fish
  • - Black Mustard Seeds(Rai/Mustard) - 50gm
  • 100 g Yellow Mustard Seeds
  • 500 ml Water
  • 200 ml Mustard Oil
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • 10G Salt
  • 500 G Sugar

Instructions

  1. Step 1: Grind the soaked black mustard seeds, yellow mustard seeds, and 2 green chilies together into a smooth paste using minimal water.
  2. Step 2: Marinate the Hilsa fish pieces with turmeric powder and salt. Let it rest for 10 minutes.
  3. Step 3: Heat mustard oil in a pan until it reaches its smoking point, then reduce the heat.
  4. Step 4: Lightly fry the fish pieces on both sides for about 1-2 minutes each. Remove and set aside.
  5. Step 5: In the same pan, add the mustard paste, salt, sugar, and water. Allow it to simmer for 5 minutes.
  6. Step 6: Gently place the fish pieces into the simmering mustard sauce. Add the remaining green chilies and cook on low heat for 10 minutes, basting the fish with the sauce occasionally.
  7. Step 7: Turn off the heat and let the dish rest for a couple of minutes before serving.
