- 100 g Coriander Leaves
- 200 g Organic Tofu - Soy Paneer
- 50 g White Sesame Seeds
- 100 g Til
- 396Ml Tamari
- - Rice Vinegar
- 500Ml Habit Toasted Sesame Oil Cold Presses
- 236 ml Maple Syrup
- 250 g Cucumber
- 1 kg Bell Peppers
- 250g Green Chilli
- 500g Good Life Raw Peanuts 500 G
- 100 g Cornflour
Instructions
- 1. Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes. Coat the tofu in cornflour and then press it into a mixture of white and black sesame seeds to create an even crust.
- 2. Heat a non-stick pan over medium heat and add 1 tsp sesame oil. Pan-fry the sesame-crusted tofu cubes until golden and crispy on all sides, about 5-7 minutes. Remove from heat and set aside.
- 3. Cook the -free soba noodles according to the package instructions. Once cooked, rinse under cold water to stop the cooking process and prevent sticking.
- 4. Prepare the dressing by whisking together soy-free tamari sauce, rice vinegar, sesame oil, and maple syrup in a small bowl.
- 5. In a large mixing bowl, combine the cooked soba noodles, shredded purple cabbage, julienned cucumber, sliced bell peppers, and finely chopped green chili (if using). Toss gently to mix.
- 6. Pour the prepared dressing over the salad mixture and toss until evenly coated. Adjust seasoning as needed.
- 7. Serve the soba salad in bowls, topped with the crispy sesame-crusted tofu, crushed roasted peanuts, and a sprinkle of fresh coriander for garnish. Enjoy immediately.
