- 100 g Cornflour
- 500 G Frozen Raspberry
- - Vanilla Essence
- 200 g Strawberry
- 100 g Lemon
- 500 g Sugar
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 250 G Frozen Black Berry
Instructions
- 1. Wash and prepare the strawberries, raspberries, and blackberries. Hull and chop the strawberries into smaller pieces.
- 2. In a medium saucepan, combine the prepared berries, sugar, lemon zest, lemon juice, and salt. Cook over medium heat, stirring occasionally, until the berries release their juices and begin to soften, about 5-7 minutes.
- 3. In a small bowl, mix the cornstarch with 2 tablespoons of plant-based to create a smooth slurry.
- 4. Gradually stir the cornstarch mixture into the simmering berry mixture. Continue to cook on low heat, stirring constantly, until the mixture thickens to a pudding-like consistency, about 3-4 minutes.
- 5. Remove the saucepan from heat and stir in the vanilla extract. Allow the pudding to cool slightly before transferring to serving bowls or jars.
