A light and flavorful Odia-style ridge gourd and prawn santula, steamed and mildly spiced with mustard and coconut, perfect for a healthy weight-loss lunch.
Ingredients
- 500 g Prawns
- 500 ml Water
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 200 ml Mustard Oil
- 1 piece Coconut
- 250g Green Chilli
- 250g Ginger
- 20 g Turmeric Powder
- 10G Salt
Instructions
- Step 1: Heat the mustard oil in a deep pan over medium heat. Add the panch phoran and let it splutter for 30 seconds.
- Step 2: Add the grated ginger and slit green chilies, sauté for a minute until aromatic.
- Step 3: Add the diced ridge gourd and drumstick pieces to the pan. Sprinkle turmeric powder and salt. Mix well.
- Step 4: Pour in 1 cup of water, cover, and cook on low heat for 10 minutes until the vegetables start to soften.
- Step 5: Add the cleaned prawns and grated coconut. Stir gently to combine.
- Step 6: Cover again and cook for another 8-10 minutes on low heat until the prawns are cooked through and the vegetables are tender.
- Step 7: Adjust salt if needed. Serve hot with a side of steamed rice or pakhala.
