Paneer Quinoa Pilaf with Spiced Tomato Curry recipe

Ingredients

  • 100 g Quinoa
  • 200 g Paneer
  • 25 g Kasuri Methi
  • - Onion
  • 200 g Green Peas
  • 250g Garlic
  • 250g Ginger
  • - Red Chilli
  • 250g Coriander
  • 1 kg Rice
  • 500 ml Water
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 100g Garam Masala
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Step 1: Heat 2 tablespoons of oil in a pan. Sauté the paneer cubes until golden brown. Remove and set aside.
  2. Step 2: In the same pan, heat another 2 tablespoons of oil. Add cumin seeds and let them sizzle.
  3. Step 3: Add the chopped onions and cook until golden brown. Stir in the garlic, ginger, turmeric, coriander powder, and red chili powder. Cook for 2 minutes.
  4. Step 4: Add the chopped tomatoes and cook until softened, about 5-7 minutes. Mash slightly using the back of a spoon.
  5. Step 5: Stir in the garam masala and kasuri methi. Add 150 ml of water to adjust the consistency of the curry. Simmer for 5 minutes.
  6. Step 6: Meanwhile, in a rice cooker, add rinsed quinoa, green peas, 200 ml water, and a pinch of salt. Cook until fluffy.
  7. Step 7: Fold the sautéed paneer into the curry and let it simmer for 2 minutes.
  8. Step 8: Serve the quinoa pilaf with the paneer tomato curry on the side. Garnish with fresh coriander leaves.
