A nutritious and flavorful pilaf made with protein-rich quinoa and paneer, paired with a medium-spiced tomato curry for a satisfying dinner.
Ingredients
- 100 g Quinoa
- 200 g Paneer
- 25 g Kasuri Methi
- - Onion
- 200 g Green Peas
- 250g Garlic
- 250g Ginger
- - Red Chilli
- 250g Coriander
- 1 kg Rice
- 500 ml Water
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100g Garam Masala
- 10G Salt
- - Cumin Seed
Instructions
- Step 1: Heat 2 tablespoons of oil in a pan. Sauté the paneer cubes until golden brown. Remove and set aside.
- Step 2: In the same pan, heat another 2 tablespoons of oil. Add cumin seeds and let them sizzle.
- Step 3: Add the chopped onions and cook until golden brown. Stir in the garlic, ginger, turmeric, coriander powder, and red chili powder. Cook for 2 minutes.
- Step 4: Add the chopped tomatoes and cook until softened, about 5-7 minutes. Mash slightly using the back of a spoon.
- Step 5: Stir in the garam masala and kasuri methi. Add 150 ml of water to adjust the consistency of the curry. Simmer for 5 minutes.
- Step 6: Meanwhile, in a rice cooker, add rinsed quinoa, green peas, 200 ml water, and a pinch of salt. Cook until fluffy.
- Step 7: Fold the sautéed paneer into the curry and let it simmer for 2 minutes.
- Step 8: Serve the quinoa pilaf with the paneer tomato curry on the side. Garnish with fresh coriander leaves.
