- 200 g Paneer
- 500 g Onion
- 200 g Dahi
- 1Bunch Pudina
- 100 g Coriander Leaves
- 200G Adrak Lasun Paste (200g)
- 200 ml Mustard Oil
- 500 g Capsicum Green
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera Powder
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Heat 1 tbsp of oil in a pan over medium heat. Add the ginger-garlic paste and sauté for 1 minute until fragrant.
- 2. Add the sliced onions and bell peppers to the pan. Sprinkle with cumin powder, coriander powder, turmeric powder, and red chili powder. Cook for 3-4 minutes until the vegetables soften slightly.
- 3. Add the diced paneer to the pan and mix gently. Sprinkle with garam masala and salt to taste. Cook for 2-3 minutes, ensuring the paneer is well-coated with the spices. Remove from heat and set aside.
- 4. In a small bowl, mix plain yogurt with chopped mint and coriander leaves. Add a pinch of salt and stir well to make the chutney.
- 5. Warm the whole wheat parathas on a skillet for 1-2 minutes on each side until soft and pliable.
- 6. To assemble, spread a layer of the mint-yogurt chutney on each paratha. Add the paneer and vegetable mixture in the center and roll tightly.
- 7. Serve the Paneer Kathi Rolls warm with additional chutney on the side, if desired.
