Ingredients

  • 250 g Spinach
  • Pcs Fortune Aata 1k
  • 1 l Refined Soyabean Oil
  • 100 g Ajwain
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 200 g Table Salt

Instructions

  1. 1. Rinse 1 cup of fresh spinach leaves thoroughly under running water. Blanch the spinach in boiling water for 2 minutes, then transfer to ice water to retain its color. Drain and blend into a smooth puree without adding water.
  2. 2. In a mixing bowl, combine 2 cups of whole wheat flour, 1/2 tsp carom seeds (ajwain), 1/4 tsp turmeric powder, 1/4 tsp red chili powder, 1/2 tsp salt, and the spinach puree. Mix well.
  3. 3. Gradually add 2-3 tbsp of water as needed and knead the mixture into a soft, pliable dough. Add 1 tsp of oil while kneading to make the dough smooth. Cover and let it rest for 15 minutes.
  4. 4. Divide the dough into equal portions and roll each portion into small balls. Flatten the balls slightly and dust with dry flour.
  5. 5. Roll out each ball into a circular paratha of about 6-7 inches in diameter using a rolling pin, ensuring it is not too thin or thick.
  6. 6. Heat a tawa or flat skillet on medium flame. Place one rolled-out paratha on the tawa and cook for 30-40 seconds on one side until bubbles appear.
  7. 7. Flip the paratha and spread 1/2 tsp of oil or ghee on the cooked side. Flip again and spread oil or ghee on the other side. Press gently with a spatula and cook until golden brown spots appear on both sides.
  8. 8. Repeat the process with the remaining dough portions. Serve the palak paratha hot with yogurt, pickle, or chutney.
