A traditional Odia-inspired steamed rice pitha stuffed with a spiced lentil and vegetable filling, served with a refreshing ridge gourd chutney. This dish is light, flavorful, and perfect for a weight-loss diet.
Ingredients
- - Grated Coconut
- - Mustard Seeds
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- 250g Green Chilli
- 250g Ginger
- 250g Coriander
- 20 g Turmeric Powder
- 10G Salt
- 200 ml Mustard Oil
- - Red Chilli
- 20G Curry Leaves
Instructions
- Step 1: Drain the soaked rice and grind into a smooth batter using minimal water. Set aside.
- Step 2: Drain the soaked moong dal and coarsely grind it. Combine it with turmeric powder, grated coconut, green chilies, and ginger. Add salt to taste and mix well.
- Step 3: Heat 1 teaspoon of mustard oil in a pan. Add panch phoran and let it splutter. Add moong dal mixture and stir-fry for 4-5 minutes. Remove from heat and let it cool.
- Step 4: Grease small bowls or ramekins with mustard oil. Pour a thin layer of rice batter into each bowl, add a layer of the moong dal mixture, and top with another thin layer of rice batter. Steam the bowls in a steamer or idli cooker for 15-20 minutes until set.
- Step 5: For the ridge gourd chutney, heat 1 teaspoon of mustard oil in a pan. Add cumin seeds, dry red chili, and curry leaves. Sauté for a few seconds, then add the chopped ridge gourd and cook until soft. Blend the cooked ridge gourd with salt to taste and a few coriander leaves into a smooth chutney.
- Step 6: Carefully unmold the steamed pithas and serve hot with the ridge gourd chutney.
