A healthy, protein-packed Odia dish featuring tender mutton and seasonal vegetables, lightly spiced and simmered to perfection with mustard oil and panch phoran.
Ingredients
- 250 g Mutton
- 500 ml Water
- 500 G Ridge Gourd/Jhinge Tori(500Gm)
- - Smiles-crispy Happy Potatoes-750 Gms
- 250g Green Chilli
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat 1 tablespoon of mustard oil in a deep pan. Add panch phoran and let it splutter.
- Step 2: Add mutton pieces and sauté on medium heat until lightly browned, about 5 minutes.
- Step 3: Remove the mutton and set aside. In the same pan, add the remaining mustard oil and sauté the ridge gourd, drumsticks, potatoes, and carrots for 3-4 minutes.
- Step 4: Add the turmeric powder, cumin powder, and salt to the vegetables. Mix well.
- Step 5: Return the mutton to the pan, add 300 ml of water, and bring to a boil.
- Step 6: Lower the heat, cover, and simmer for 25-30 minutes until the mutton is tender and the vegetables are cooked through.
- Step 7: Garnish with chopped coriander leaves and serve hot.
