Ingredients
- 250 g Mutton
- Pcs Epi Yogurt Mango
- 500 ml Milk
- - Dry Yeast
- - Onion
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- - Butter
- 150 Gms Green Cardamom
- 150 Gms Cloves
- - Bay Leaf
- 500 ml Water
- 200 ml Mustard Oil
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100g Garam Masala
- 10G Salt
- 500 G Sugar
- 500 g Refined Flour
- - Cumin Seed
Instructions
- Step 1: Heat mustard oil in a heavy-bottomed pan and add cumin seeds, bay leaf, cinnamon, cardamom, and cloves. Let them sizzle for 30 seconds.
- Step 2: Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until fragrant.
- Step 3: Stir in Kashmiri chili powder, turmeric, coriander powder, and garam masala. Cook for 1 minute.
- Step 4: Add mutton pieces and cook on high heat for 5 minutes until they are seared well.
- Step 5: Lower the heat and mix in tomato puree and whisked yogurt. Combine thoroughly.
- Step 6: Pour water and adjust salt. Cover and simmer on low heat for 30–35 minutes until the mutton is tender and the gravy is thick.
- Step 7: Meanwhile, prepare the naan dough by mixing flour, sugar, salt, activated yeast, lukewarm milk, and a little water into a soft dough. Let it rest for 20 minutes.
- Step 8: Roll the dough into flat ovals and cook on a hot tawa or griddle until golden spots appear on both sides. Brush with melted butter.
- Step 9: Serve the Rogan Josh with buttered naan and enjoy warm.
