Ingredients

  • 250 g Mutton
  • - Lemon Juice
  • 250g Coriander
  • 250g Ginger
  • 250g Garlic
  • 250g Green Chilli
  • - Red Chilli
  • 500 ml Water
  • 1 kg Bajra Flour
  • 20 g Turmeric Powder
  • 50 g Cumin Powder
  • 10G Salt
  • 1 l Soyabean Oil

Instructions

  1. Step 1: In a bowl, marinate the diced mutton with turmeric powder, red chili powder, cumin powder, salt, and a teaspoon of vegetable oil. Let it rest for 30 minutes.
  2. Step 2: Prepare the bajra flatbread dough by mixing bajra flour, salt, chopped coriander leaves, and lukewarm water. Knead it into a soft dough, using a teaspoon of oil to make it pliable.
  3. Step 3: Divide the dough into small balls and flatten them into round disks using your palms or a rolling pin. Set aside.
  4. Step 4: Air-fry the marinated mutton chunks at 180°C for 15 minutes, tossing halfway through to ensure even cooking.
  5. Step 5: For the chutney, heat a tablespoon of oil in a pan. Sauté grated ginger, minced garlic, and chopped green chili until fragrant. Add tomato puree, salt, and a pinch of turmeric, cooking until thickened. Stir in lemon juice at the end.
  6. Step 6: Dry-roast the bajra flatbreads on a hot skillet until both sides are golden and cooked through.
