A fragrant and hearty Moroccan-style mutton tagine, slow-braised with warm spices, vegetables, and dried fruits, served over fluffy couscous for a wholesome and satisfying dinner.
Ingredients
- 250 g Mutton
- 200 g Dried Apricots
- 500G Freshos Couscous Semolina
- - Onion
- 250g Garlic
- 250g Ginger
- 2 pcs Zucchini
- 200 G Green Choliya/Chickpeas(200 Gm)
- 100 ml Olive Oil
- 250g Coriander
- 500 g Tomato - Hybrid
- 10G Salt
- 500 ml Water
- 100 g Coriander Powder
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 55 g Paprika Powder
- 50 g Cinnamon Powder
- 50 g Black Pepper
Instructions
- Step 1: Heat olive oil in a large tagine or heavy-bottomed pot over medium heat. Add the chopped onions, garlic, and grated ginger, and sauté until softened and aromatic, about 5 minutes.
- Step 2: Add the mutton pieces to the pot and sear them on all sides until lightly golden, about 6-8 minutes.
- Step 3: Stir in the coriander powder, cumin powder, turmeric powder, paprika, cinnamon powder, black pepper, and salt. Cook for 1-2 minutes, allowing the spices to release their aroma.
- Step 4: Add the pureed tomatoes and mix well. Cook for 5 minutes until the tomato base thickens slightly.
- Step 5: Add the carrots, zucchini, dried apricots, chickpeas, and water. Mix everything together, cover the tagine or pot, and reduce the heat to low. Allow it to simmer gently for 40-45 minutes, stirring occasionally, until the mutton is tender and the sauce has thickened.
- Step 6: While the tagine is cooking, prepare the couscous. Place the dry couscous in a heatproof bowl, sprinkle a pinch of salt, and cover with an equal volume of boiling water. Cover the bowl and let it sit for 5 minutes. Fluff with a fork before serving.
- Step 7: Once the tagine is cooked, adjust salt to taste and garnish with freshly chopped coriander.
- Step 8: Serve the mutton tagine hot over a bed of fluffy couscous.
