Ingredients

  • 500g Cucumber
  • 250g Green Chilli
  • - Surmai
  • 250 G Carom Seeds / Ajwain 250 G
  • - Lemon Juice
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 10G Salt
  • 200 ml Mustard Oil
  • NaN Red Jowar Flour
  • - Onion
  • 250g Coriander
  • - Chaat Masala

Instructions

  1. Step 1: Wash the surmai steaks and pat dry. In a bowl, mix turmeric powder, red chili powder, ginger-garlic paste, carom seeds, coriander powder, lemon juice, and salt. Coat the fish steaks evenly with this marinade and let them rest for 20 minutes.
  2. Step 2: Heat mustard oil on a tawa (flat griddle) over medium heat until it reaches its smoking point, then reduce the heat. Place the marinated fish steaks on the tawa and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.
  3. Step 3: To prepare the jowar rotis, knead the jowar flour with warm water to make a soft dough. Divide into small balls and roll them out into thin discs. Heat a tawa and cook the rotis on both sides, pressing gently with a cloth until puffed and cooked. Keep warm.
  4. Step 4: For the kachumber salad, mix the cucumber, tomato, onion, green chili, and coriander leaves in a bowl. Add chaat masala, lemon juice, and salt. Toss well to combine.
