A bold and flavorful Maharashtrian-style seared kingfish (Surmai) coated with aromatic spices, paired with wholesome jowar rotis and a refreshing kachumber salad for a satisfying dinner.
Ingredients
- 500g Cucumber
- 250g Green Chilli
- - Surmai
- 250 G Carom Seeds / Ajwain 250 G
- - Lemon Juice
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
- 200 ml Mustard Oil
- NaN Red Jowar Flour
- - Onion
- 250g Coriander
- - Chaat Masala
Instructions
- Step 1: Wash the surmai steaks and pat dry. In a bowl, mix turmeric powder, red chili powder, ginger-garlic paste, carom seeds, coriander powder, lemon juice, and salt. Coat the fish steaks evenly with this marinade and let them rest for 20 minutes.
- Step 2: Heat mustard oil on a tawa (flat griddle) over medium heat until it reaches its smoking point, then reduce the heat. Place the marinated fish steaks on the tawa and cook for 4-5 minutes on each side until golden brown and cooked through. Remove and keep warm.
- Step 3: To prepare the jowar rotis, knead the jowar flour with warm water to make a soft dough. Divide into small balls and roll them out into thin discs. Heat a tawa and cook the rotis on both sides, pressing gently with a cloth until puffed and cooked. Keep warm.
- Step 4: For the kachumber salad, mix the cucumber, tomato, onion, green chili, and coriander leaves in a bowl. Add chaat masala, lemon juice, and salt. Toss well to combine.
