- 200 g Dahi
- 100 g Coriander Leaves
- medium Chilli Green Long
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Crumble the tofu into small pieces and set aside. Wash and chop the spinach finely.
- 2. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- 3. Add green chili, tomato, turmeric powder, red chili powder, and garam masala to the pan. Cook for 2-3 minutes until the tomatoes soften.
- 4. Add the crumbled tofu and mix well. Cook for 5 minutes, stirring occasionally, to let the spices infuse into the tofu.
- 5. Add the chopped spinach and cook for another 2 minutes until the spinach wilts. Season with salt and stir in the yogurt for creaminess.
- 6. Warm the parathas on a hot griddle or tawa until soft and pliable.
- 7. Place the tofu-spinach mixture onto the parathas, garnish with coriander leaves, and roll them into wraps.
- 8. Serve hot with a side of yogurt or mint chutney for extra flavor.
