Ingredients
- 250 ml Coconut Milk
- 500g Cauliflower
- 200 g Green Peas
- 100 G Kolhapuri Masala
- 250g Coriander
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 10G Salt
- NaN Red Jowar Flour
Instructions
- Step 1: Heat 2 tablespoons of oil in a deep pan. Add chopped onions and sauté until golden brown.
- Step 2: Add the ginger-garlic paste and sauté for 1-2 minutes until fragrant.
- Step 3: Stir in the Kolhapuri masala, turmeric powder, red chili powder, and coriander powder. Cook for 1 minute to release the spices' aroma.
- Step 4: Add the pureed tomatoes and cook for 5-7 minutes until the oil separates from the mixture.
- Step 5: Add the cauliflower, carrots, green beans, and green peas. Mix well, then add 100 ml of water and cover the pan. Let the vegetables cook for 10-12 minutes on medium heat.
- Step 6: Once the vegetables are tender, add the coconut milk and adjust salt to taste. Simmer for 5 minutes, then garnish with fresh coriander leaves.
- Step 7: To prepare the Jowar Bhakri, heat a tawa (flat griddle). In a bowl, mix the jowar flour with warm water to form a soft dough.
- Step 8: Divide the dough into 2 equal portions. Roll each portion into a thin, round flatbread using your hands or a rolling pin.
- Step 9: Cook the bhakri on the hot tawa for 1-2 minutes on each side until light brown spots appear. Use a clean cloth to press gently for even cooking.
- Step 10: Serve the Veg Kolhapuri hot with freshly made Jowar Bhakri.
