Ingredients

  • 200 g Paneer
  • 100 G Asafoetida / Hing 100 G
  • - Lemon Juice
  • 500 g Toor Dal
  • 500 g Rice
  • 500 g Ghee
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • - Red Chilli
  • 250g Green Chilli
  • 250g Coriander
  • 250g Ginger
  • 10G Salt

Instructions

  1. Step 1: Cook the rice. In a pot, boil rice with 2 cups of water, a pinch of salt, and 1 teaspoon of ghee. Once cooked, fluff and keep aside.
  2. Step 2: Prepare the dal. Pressure cook the soaked toor dal with 2 cups of water, turmeric powder, and asafoetida for 3 whistles. Mash lightly once cooked.
  3. Step 3: Temper the dal. Heat 1 tablespoon of ghee in a pan. Add cumin seeds, green chilies, grated ginger, and coriander powder. Sauté for 1 minute, then add the dal. Simmer for 5 minutes and adjust salt.
  4. Step 4: Prepare the paneer curry. In another pan, heat 1 tablespoon of ghee. Add cumin seeds, coriander powder, red chili powder, and a pinch of turmeric. Stir well and add the paneer cubes. Toss gently to coat the paneer in spices. Cook for 5 minutes.
  5. Step 5: Assemble the dish. Serve the spiced paneer and tempered dal over the ghee-soaked rice. Garnish with chopped coriander leaves and a drizzle of lemon juice.
