Ingredients

  • 1 kg Basmati Rice
  • 250 g Carrot
  • 500g Cauliflower
  • 200 g Green Peas
  • - Onion
  • 250g Coriander
  • 1 piece Coconut
  • 500 g Ghee
  • 500 g Tomato - Hybrid
  • - Mustard Seeds
  • - Bay Leaf
  • 150 Gms Cloves
  • 500 ml Water
  • 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
  • 20 g Turmeric Powder
  • 100 G Goda Masala
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Step 1: Heat oil and ghee in a heavy-bottomed pot over medium heat. Add mustard seeds, cumin seeds, bay leaf, cloves, and peppercorns. Allow them to sizzle for 30 seconds.
  2. Step 2: Add sliced onions and sauté until golden brown. Stir in ginger-garlic paste and cook for 1 minute.
  3. Step 3: Add diced tomatoes and cook until softened, about 5 minutes. Mix in turmeric powder, red chili powder, and goda masala.
  4. Step 4: Add all the vegetables (carrot, green beans, cauliflower, green peas) and sauté for 3-4 minutes.
  5. Step 5: Drain the soaked rice and add it to the pot. Gently stir to coat the rice with the spices.
  6. Step 6: Pour in hot water, add salt to taste, and mix well. Cover the pot and let it cook on low heat for 15-20 minutes or until the rice is fully cooked and the water is absorbed.
  7. Step 7: Fluff the rice gently with a fork. Garnish with grated coconut and chopped coriander leaves before serving.
