Ingredients
- 1 kg Basmati Rice
- 250 g Carrot
- 500g Cauliflower
- 200 g Green Peas
- - Onion
- 250g Coriander
- 1 piece Coconut
- 500 g Ghee
- 500 g Tomato - Hybrid
- - Mustard Seeds
- - Bay Leaf
- 150 Gms Cloves
- 500 ml Water
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 20 g Turmeric Powder
- 100 G Goda Masala
- 10G Salt
- - Cumin Seed
Instructions
- Step 1: Heat oil and ghee in a heavy-bottomed pot over medium heat. Add mustard seeds, cumin seeds, bay leaf, cloves, and peppercorns. Allow them to sizzle for 30 seconds.
- Step 2: Add sliced onions and sauté until golden brown. Stir in ginger-garlic paste and cook for 1 minute.
- Step 3: Add diced tomatoes and cook until softened, about 5 minutes. Mix in turmeric powder, red chili powder, and goda masala.
- Step 4: Add all the vegetables (carrot, green beans, cauliflower, green peas) and sauté for 3-4 minutes.
- Step 5: Drain the soaked rice and add it to the pot. Gently stir to coat the rice with the spices.
- Step 6: Pour in hot water, add salt to taste, and mix well. Cover the pot and let it cook on low heat for 15-20 minutes or until the rice is fully cooked and the water is absorbed.
- Step 7: Fluff the rice gently with a fork. Garnish with grated coconut and chopped coriander leaves before serving.
