Ingredients

  • 20G Curry Leaves
  • Pcs Chings Masala Chicken Chilli
  • - Onion
  • 250g Ginger
  • 250g Garlic
  • 1 piece Coconut
  • 100 G Malvani Masala
  • 1 kg Basmati Rice
  • 500 g Ghee
  • 250g Green Chilli
  • 250g Coriander
  • 200 ml Sesame Oil
  • 100 g Jeera
  • 500 ml Water
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 10G Salt

Instructions

  1. Step 1: Heat a pan and dry roast grated coconut until golden brown. Cool and grind into a fine paste with a splash of water. Set aside.
  2. Step 2: Heat 1 tsp of ghee in a large pot. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
  3. Step 3: Add garlic, ginger, and green chilies. Sauté until fragrant. Add pureed tomatoes and cook until the mixture thickens and oil separates.
  4. Step 4: Mix in turmeric powder, red chili powder, coriander powder, and Malvani masala. Stir for 1 minute to toast the spices.
  5. Step 5: Add the chicken pieces and cook on medium-high heat for 5 minutes until they are lightly seared.
  6. Step 6: Add the roasted coconut paste, curry leaves, water, and salt. Cover and simmer for 25 minutes until the chicken is fully cooked and tender.
  7. Step 7: While the chicken is simmering, prepare the jeera rice. Heat 1 tsp of ghee in a pot. Add cumin seeds and let them splutter.
  8. Step 8: Add the rinsed basmati rice and sauté gently for 1-2 minutes. Add 300 ml of water, salt to taste, and cook covered on low heat until the rice is fluffy.
  9. Step 9: Taste the chicken curry and adjust seasoning if needed. Garnish with fresh coriander leaves.
  10. Step 10: Serve the Malvani chicken curry hot with the prepared jeera rice.
