Ingredients
- 20G Curry Leaves
- Pcs Chings Masala Chicken Chilli
- - Onion
- 250g Ginger
- 250g Garlic
- 1 piece Coconut
- 100 G Malvani Masala
- 1 kg Basmati Rice
- 500 g Ghee
- 250g Green Chilli
- 250g Coriander
- 200 ml Sesame Oil
- 100 g Jeera
- 500 ml Water
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
Instructions
- Step 1: Heat a pan and dry roast grated coconut until golden brown. Cool and grind into a fine paste with a splash of water. Set aside.
- Step 2: Heat 1 tsp of ghee in a large pot. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
- Step 3: Add garlic, ginger, and green chilies. Sauté until fragrant. Add pureed tomatoes and cook until the mixture thickens and oil separates.
- Step 4: Mix in turmeric powder, red chili powder, coriander powder, and Malvani masala. Stir for 1 minute to toast the spices.
- Step 5: Add the chicken pieces and cook on medium-high heat for 5 minutes until they are lightly seared.
- Step 6: Add the roasted coconut paste, curry leaves, water, and salt. Cover and simmer for 25 minutes until the chicken is fully cooked and tender.
- Step 7: While the chicken is simmering, prepare the jeera rice. Heat 1 tsp of ghee in a pot. Add cumin seeds and let them splutter.
- Step 8: Add the rinsed basmati rice and sauté gently for 1-2 minutes. Add 300 ml of water, salt to taste, and cook covered on low heat until the rice is fluffy.
- Step 9: Taste the chicken curry and adjust seasoning if needed. Garnish with fresh coriander leaves.
- Step 10: Serve the Malvani chicken curry hot with the prepared jeera rice.
