A wholesome and flavorful Jain-friendly sprouted moong usal paired with traditional bajra bhakri, perfect for a light yet protein-packed dinner.
Ingredients
- - Grated Coconut
- 250g Coriander
- 250g Green Chilli
- 250g Ginger
- 500 ml Water
- 20 g Turmeric Powder
- 100 g Coriander Powder
- - Rock Salt
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 1 kg Bajra Flour
Instructions
- Step 1: Heat a pan on medium flame and add 2 teaspoons of oil. Once hot, add cumin seeds and let them crackle.
- Step 2: Add grated ginger and chopped green chilies. Sauté for 30 seconds.
- Step 3: Add sprouted moong beans, turmeric powder, coriander powder, and rock salt. Mix well and add 100 ml water. Cover and cook for 8-10 minutes until the moong beans are tender but not mushy.
- Step 4: Once cooked, garnish with fresh coriander leaves and grated coconut. Turn off the heat.
- Step 5: To prepare the bajra bhakri, knead the bajra flour with warm water into a soft dough. Divide into two portions and roll each into a thick flat disc using your hands.
- Step 6: Heat a flat griddle (tava) and cook each bhakri on medium flame. Flip and cook both sides until slightly charred and cooked through.
- Step 7: Serve the sprouted moong usal hot with bajra bhakri.
