Maharashtrian Jain Masala Khichdi recipe

Ingredients

  • 250 g Carrot
  • 200 g Green Peas
  • 250g Green Chilli
  • 100g Garam Masala
  • 500 g Ghee
  • 250g Coriander
  • 500 ml Water
  • 20 g Turmeric Powder
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Heat ghee in a pressure cooker over medium heat.
  2. Add cumin seeds and slit green chili, and sauté until aromatic.
  3. Stir in chopped tomatoes and cook until softened, about 3 minutes.
  4. Add turmeric powder, red chili powder, and garam masala. Mix well.
  5. Add chopped carrots and green peas. Stir to coat the vegetables with the spices.
  6. Drain the soaked rice and moong dal, and add them to the cooker. Mix gently.
  7. Pour in water and season with salt to taste.
  8. Pressure cook for 2 whistles on medium heat. Allow pressure to release naturally.
  9. Open the cooker, fluff the khichdi gently, and garnish with fresh coriander leaves.
  10. Serve warm with a side of cucumber salad or plain yogurt (optional).
