Ingredients

  • 20G Curry Leaves
  • 200 g Paneer
  • 250 ml Coconut Milk
  • 1 kg Basmati Rice
  • 200 g Green Peas
  • 500g Cauliflower
  • - Onion
  • 250g Green Chilli
  • 250g Garlic
  • 250g Ginger
  • 500 g Ghee
  • 250g Coriander
  • 100 g Lemon
  • - Mustard Seeds
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 100g Garam Masala
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, mustard seeds, and curry leaves. Let them splutter.
  2. Step 2: Add the sliced onions and sauté until golden brown. Stir in the garlic, ginger, and green chilies and cook for 1 minute.
  3. Step 3: Add the vegetables (carrots, peas, and cauliflower) and sauté for 5 minutes. Add turmeric powder, coriander powder, and a pinch of salt.
  4. Step 4: Add the soaked and drained basmati rice to the pan. Mix well to coat the rice with the spices.
  5. Step 5: Pour in 400 ml of water and bring to a boil. Reduce the heat to low, cover with a lid, and let it simmer for 12-15 minutes until the rice is cooked and the water is absorbed.
  6. Step 6: While the rice is cooking, heat the remaining ghee in a separate pan. Add the paneer cubes and lightly fry them until golden on all sides. Sprinkle with garam masala and set aside.
  7. Step 7: Once the rice is cooked, gently fluff it with a fork, and pour in the coconut milk. Mix lightly to combine.
  8. Step 8: Garnish the Bhaat with fresh coriander leaves. Serve hot with the spiced paneer on top and a lemon wedge on the side.
