- 20G Curry Leaves
- 200 g Paneer
- 250 ml Coconut Milk
- 1 kg Basmati Rice
- 200 g Green Peas
- 500g Cauliflower
- - Onion
- 250g Green Chilli
- 250g Garlic
- 250g Ginger
- 500 g Ghee
- 250g Coriander
- 100 g Lemon
- - Mustard Seeds
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100g Garam Masala
- 10G Salt
- - Cumin Seed
Instructions
- Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, mustard seeds, and curry leaves. Let them splutter.
- Step 2: Add the sliced onions and sauté until golden brown. Stir in the garlic, ginger, and green chilies and cook for 1 minute.
- Step 3: Add the vegetables (carrots, peas, and cauliflower) and sauté for 5 minutes. Add turmeric powder, coriander powder, and a pinch of salt.
- Step 4: Add the soaked and drained basmati rice to the pan. Mix well to coat the rice with the spices.
- Step 5: Pour in 400 ml of water and bring to a boil. Reduce the heat to low, cover with a lid, and let it simmer for 12-15 minutes until the rice is cooked and the water is absorbed.
- Step 6: While the rice is cooking, heat the remaining ghee in a separate pan. Add the paneer cubes and lightly fry them until golden on all sides. Sprinkle with garam masala and set aside.
- Step 7: Once the rice is cooked, gently fluff it with a fork, and pour in the coconut milk. Mix lightly to combine.
- Step 8: Garnish the Bhaat with fresh coriander leaves. Serve hot with the spiced paneer on top and a lemon wedge on the side.
