Ingredients
- 20G Curry Leaves
- 1 piece Coconut
- 200 ml Mustard Oil
- - Onion
- 250g Garlic
- 250g Ginger
- - Red Chilli
- 250g Green Chilli
- 1 Kg R.C. Fish
- 500 ml Water
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 50 g Cumin Powder
- 10G Salt
- 500 G Sugar
Instructions
- Step 1: Prepare the Fish Filling - Heat 1 tablespoon mustard oil in a pan, add onions, garlic, ginger, and green chilies. Sauté until fragrant. Add finely chopped fish, turmeric powder, salt, and cook until the fish is tender and flaky. Set aside to cool.
- Step 2: Make Millet Dough - In a bowl, mix finger millet flour with a pinch of salt and enough hot water to form a soft, pliable dough. Knead well and cover to rest for 10 minutes.
- Step 3: Shape the Dumplings - Divide the millet dough into small balls. Flatten each ball and stuff it with the cooked fish filling. Seal tightly and shape into round dumplings.
- Step 4: Steam Dumplings - Steam the stuffed dumplings in a steamer for 12-15 minutes until firm. Keep warm.
- Step 5: Prepare Coconut-Tamarind Sauce - Heat 1 tablespoon mustard oil in a pan, add panch phoran, dry red chilies, and curry leaves. Once aromatic, add grated coconut and sauté lightly. Stir in tamarind pulp, water, turmeric powder, coriander powder, cumin powder, salt, and sugar. Simmer for 5 minutes.
- Step 6: Assemble - Gently place the steamed dumplings into the simmering sauce and cook for another 3-5 minutes, allowing the flavors to meld.
- Step 7: Serve - Garnish with fresh curry leaves and serve hot as a standalone dish or with a side of simple cucumber salad.
