- 500g Cucumber
- 100 ml Olive Oil
Instructions
- Step 1: In a mixing bowl, combine lamb mince, grated onion, minced garlic, grated ginger, coriander leaves, cumin powder, coriander powder, paprika, turmeric, salt, and black pepper. Mix thoroughly and knead the mixture for 3-4 minutes to ensure a smooth texture.
- Step 2: Divide the mixture into 8 equal portions and shape each into long, thin kebabs on metal skewers or wooden skewers (pre-soaked in water).
- Step 3: Heat a grill pan or a skillet over medium-high heat and lightly grease it with olive oil. Cook the kebabs for 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
- Step 4: In a small bowl, mix Greek yogurt, chopped mint leaves, and lemon juice. Season with a pinch of salt and stir well to make the yogurt-mint dressing.
- Step 5: Warm the multigrain lavash on a hot skillet for a few seconds to make them pliable.
- Step 6: Assemble the wraps by placing cucumber strips, tomato slices, 2 lamb seekh kebabs, and a generous dollop of yogurt-mint dressing on each lavash. Roll tightly and secure with parchment paper or toothpicks if needed.
- Step 7: Serve immediately with extra yogurt-mint dressing on the side.
