A rich and flavorful Kolhapuri-style mutton biryani cooked with tender marinated mutton, aromatic spices, and fluffy basmati rice, all finished in the air fryer for a convenient twist.
Ingredients
- 250 g Mutton
- Pcs Epi Yogurt Mango
- 100 G Kolhapuri Masala
- 1 kg Basmati Rice
- 250g Green Chilli
- 500 g Ghee
- 250g Coriander
- 50 Grms Red Chili Powder Handmade Spices 50 Grms
- 10G Salt

Instructions
- Step 1: Marinate the mutton with yogurt, Kolhapuri masala, ginger-garlic paste, and salt. Let it rest for 30 minutes.
- Step 2: Heat oil in a pan. Add whole spices and sauté until aromatic. Add sliced onions and cook until golden brown.
- Step 3: Stir in chopped tomatoes, green chilies, and a pinch of salt. Cook until the tomatoes soften and the oil separates.
- Step 4: Add the marinated mutton and cook on medium heat until the mutton is partially cooked and the masala thickens.
- Step 5: Boil basmati rice with salt and whole spices (optional) until 70% cooked. Drain and set aside.
- Step 6: In a deep air fryer-safe dish, layer half the rice, followed by the mutton mixture, and then the remaining rice. Drizzle ghee and garnish with mint and coriander leaves.
- Step 7: Cover the dish with aluminum foil and place it in the air fryer. Cook at 180°C for 25 minutes.
- Step 8: Let the biryani rest for 5 minutes before serving. Gently mix and serve hot.
