Ingredients
- 1 pc (200 g) Amul Sour Cream
- 100 g Old Hill Parmesan Cheese
- 125 g Mooz Butter Garlic & Herbes
- 140 g Jabsons Roasted Chana Tandoori
- 300 g Nutty Yogi Almond Flour (With Skin)
- 1 pack (500 g) Praakritik Organic Coconut Flour
- 100 g Baby Spinach
Instructions
- 1. Preheat your oven to 375°F (190°C) and grease a 9 x 13-inch baking dish with 1 tablespoon of melted butter.
- 2. Cook spinach in a skillet over medium heat until wilted and any excess water has evaporated. Let it cool slightly.
- 3. In a mixing bowl, combine the cooked spinach, 1/4 cup sour cream, 1/2 cup almond flour (as a keto-friendly substitute for bread crumbs), and 1/4 cup grated Parmesan cheese. Mix well.
- 4. Lay out 10 low-carb crepes and place 2 tablespoons of the spinach mixture in the center of each crepe. Roll them up tightly and arrange them seam-side down in the prepared baking dish.
- 5. Brush the tops of the crepes with the remaining 1 tablespoon of melted butter. Sprinkle 1/4 cup grated Parmesan cheese and 1 cup of roasted chana evenly over the crepes.
- 6. Bake in the preheated oven for 15 minutes, or until the cheese is melted and the crepes are heated through.
- 7. If making ahead, cover and refrigerate the dish. When ready to bake, increase the baking time to 25 minutes to ensure the crepes are warmed through.
