About this recipe

A delicious keto-friendly dinner option featuring spinach, creamy cheese, and crispy bacon, all wrapped in low-carb crepes and baked to perfection.

Ingredients

  • 1 pc (200 g) Amul Sour Cream
  • 100 g Old Hill Parmesan Cheese
  • 125 g Mooz Butter Garlic & Herbes
  • 140 g Jabsons Roasted Chana Tandoori
  • 300 g Nutty Yogi Almond Flour (With Skin)
  • 1 pack (500 g) Praakritik Organic Coconut Flour
  • 100 g Baby Spinach

Instructions

  1. 1. Preheat your oven to 375°F (190°C) and grease a 9 x 13-inch baking dish with 1 tablespoon of melted butter.
  2. 2. Cook spinach in a skillet over medium heat until wilted and any excess water has evaporated. Let it cool slightly.
  3. 3. In a mixing bowl, combine the cooked spinach, 1/4 cup sour cream, 1/2 cup almond flour (as a keto-friendly substitute for bread crumbs), and 1/4 cup grated Parmesan cheese. Mix well.
  4. 4. Lay out 10 low-carb crepes and place 2 tablespoons of the spinach mixture in the center of each crepe. Roll them up tightly and arrange them seam-side down in the prepared baking dish.
  5. 5. Brush the tops of the crepes with the remaining 1 tablespoon of melted butter. Sprinkle 1/4 cup grated Parmesan cheese and 1 cup of roasted chana evenly over the crepes.
  6. 6. Bake in the preheated oven for 15 minutes, or until the cheese is melted and the crepes are heated through.
  7. 7. If making ahead, cover and refrigerate the dish. When ready to bake, increase the baking time to 25 minutes to ensure the crepes are warmed through.
  8. 8. Serve hot and enjoy your keto-friendly spinach and cheese crepes!
