  • 100 g Garlic - Single Clove
  • 6 pcs Licious Brown Eggs
  • 1 pack (1 kg) Amul Diced Cheddar
  • 1 pc Cabbage Red
  • 200 g Organic Pantry - Organic Pumpkin Seeds (Aaa Grade)
  • 100 g Baby Spinach
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 1 pack (25 g) Snapin Nutmeg Powder
  • 80 g Urban Platter Cayenne Pepper Powder
  • 170 g The Gourmet Jar Wholegrain Mustard Paste
  • 1 pc (52 g) On1Y Paprika Powder
  • 1 ltr Sofit Natural Soy Beverage (Sugar Free, Vegan)

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and grease a 9 x 13-inch baking dish with oil or butter.
  2. 2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add 1 cup of finely chopped onion and sauté until softened, about 5 minutes.
  3. 3. Stir in 2 pounds of fresh spinach, 1 teaspoon of salt, and 2 minced garlic cloves. Cook, stirring frequently, until the spinach is wilted, about 5 minutes.
  4. 4. In a large mixing bowl, combine the cooked spinach mixture with 4 cups of cooked cabbage, 1/4 teaspoon of nutmeg, 1/4 teaspoon of cayenne pepper, 1 teaspoon of mustard, and 1/2 cup of pumpkin seeds. Mix well.
  5. 5. In a separate bowl, whisk together 2 eggs and 1 cup of soy milk. Stir this mixture into the spinach and cabbage mixture, ensuring everything is evenly coated.
  6. 6. Fold in 1 1/2 cups of shredded cheddar cheese, reserving a small handful for topping.
  7. 7. Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle the reserved cheddar cheese and 1/4 cup of pumpkin seeds on top, then dust with 1/4 teaspoon of paprika.
