Ingredients
- 50 g On1Y Black Peppercorns With Grinder
- 1 Pack Button Mushroom (Anabe)
- 100 g Broccoli Florets
- 200 g Mooz Formaggio Feta Cheese
- 141 g Pam Grilling Grillades Cooking Spray
- 200 g Organigram Chia Seeds
- 100 g Kale Leaf
- 1 kg Akar Powder Salt
- 1 pack (25 g) Snapin Nutmeg Powder
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 500 ml American Garden Apple Cider Vinegar
Instructions
- 1. In a medium bowl, whisk together 1/4 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of nutmeg with 1 tablespoon of apple cider vinegar and 1 teaspoon chia seeds until well combined. Set aside.
- 2. Heat 1 teaspoon vegetable oil in a 10-inch skillet over medium-high heat. Add 1 cup of sliced mushrooms and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Cook for 2 minutes, stirring occasionally.
- 3. Add 1 cup of small broccoli florets to the skillet with the mushrooms. Cook for an additional 2 minutes, stirring occasionally. Transfer the mushroom and broccoli mixture to a bowl and set aside.
- 4. Return the skillet to medium heat and coat generously with nonstick cooking spray. Once the pan is hot, pour in 2/3 cup of the vinegar and chia mixture, tilting the pan to spread it evenly.
- 5. Sprinkle 1/4 cup of the mushroom and broccoli mixture and 1/4 cup crumbled feta cheese over one side of the omelet. Cook for 2 minutes, or until the edges begin to set.
- 6. Using a rubber spatula, carefully fold the other side of the omelet over the filling. Cook for 1 minute more, then slide the omelet onto a plate. Keep warm.
- 7. Repeat the process to make three more omelets with the remaining vinegar and chia mixture, mushroom and broccoli filling, and feta cheese.
- 8. In a large bowl, toss 1 tablespoon of apple cider vinegar with a pinch of salt and black pepper until evenly combined.
- 9. Serve the omelets warm with the seasoned chia mixture on the side.
