Ingredients
- 20G Curry Leaves
- 250 g Mutton
- - Onion
- 1 piece Coconut
- 250g Garlic
- 250g Ginger
- 250g Coriander
- 500 ml Water
- 150 Gms Cloves
- 20 g Cinnamon
- 100 g Coriander Seeds
- 20 g Turmeric Powder
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 10G Salt
Instructions
- Step 1: Prepare the Ragi Mudde. In a heavy-bottomed pan, boil 400 ml of water with a pinch of salt. Slowly add ragi flour while stirring continuously to avoid lumps. Cook for 8-10 minutes on low heat, stirring occasionally, until it forms a dough-like consistency. Roll into medium-sized balls and set aside.
- Step 2: Prepare the Mutton Saaru. Heat 2 tbsp oil in a pressure cooker. Add cloves, cinnamon, peppercorns, and cumin seeds. Sauté for 30 seconds.
- Step 3: Add chopped onions, garlic, ginger, and curry leaves. Cook until golden and fragrant.
- Step 4: Add mutton pieces, turmeric, and red chili powder. Sauté for 5 minutes until the mutton starts browning.
- Step 5: Add chopped tomatoes, grated coconut, and roasted coriander seeds. Mix well and cook for another 5 minutes.
- Step 6: Pour in 100 ml of water, add salt to taste, and pressure cook for 3-4 whistles.
- Step 7: Once the pressure releases, check the consistency of the saaru. It should be slightly thin. Simmer for another 5 minutes if needed.
- Step 8: Garnish the saaru with chopped coriander leaves and serve hot alongside the ragi mudde.
