A wholesome, protein-packed Karnataka-style mutton curry paired with traditional ragi mudde (finger millet balls), perfect for an advanced cook aiming for a nutritious, weight-gain dinner.
Ingredients
- 250 g Mutton
- 150 Gms Cloves
- 500 ml Water
- 500 Gms Organic Sprouted Ragi Flour
- 1 piece Coconut
- 250g Garlic
- 250g Ginger
- 250g Green Chilli
- 250g Coriander
- 20G Curry Leaves
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 10G Salt
Instructions
- Step 1: Heat 2 tablespoons of coconut oil in a heavy-bottomed pot. Add cumin seeds, cloves, cinnamon, and black peppercorns. Sauté until aromatic.
- Step 2: Add chopped onions and curry leaves. Sauté until the onions turn golden brown.
- Step 3: Stir in ginger, garlic, and green chilies. Sauté for another 2 minutes.
- Step 4: Add the mutton pieces, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 5-7 minutes until the meat is lightly seared.
- Step 5: Add 2 cups of water. Cover and simmer for 30-35 minutes, or until the mutton is tender. Stir occasionally and adjust water if needed.
- Step 6: Meanwhile, in a separate pan, dry roast the ragi flour on low heat for 2 minutes. Gradually add boiling water while stirring continuously to form a smooth dough.
- Step 7: Divide the ragi dough into equal portions and shape into smooth, firm balls (muddes) using wet hands. Cover and set aside.
- Step 8: Blend the grated coconut with a little water into a smooth paste. Add this paste to the mutton curry and simmer for 5 minutes.
- Step 9: Garnish the curry with chopped coriander leaves. Serve hot with ragi mudde.
