Karnataka-Style Mutton Ragi Mudde Meal recipe

Ingredients

  • 250 g Mutton
  • 150 Gms Cloves
  • 500 ml Water
  • 500 Gms Organic Sprouted Ragi Flour
  • 1 piece Coconut
  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 250g Coriander
  • 20G Curry Leaves
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Coriander Powder
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 10G Salt

Instructions

  1. Step 1: Heat 2 tablespoons of coconut oil in a heavy-bottomed pot. Add cumin seeds, cloves, cinnamon, and black peppercorns. Sauté until aromatic.
  2. Step 2: Add chopped onions and curry leaves. Sauté until the onions turn golden brown.
  3. Step 3: Stir in ginger, garlic, and green chilies. Sauté for another 2 minutes.
  4. Step 4: Add the mutton pieces, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 5-7 minutes until the meat is lightly seared.
  5. Step 5: Add 2 cups of water. Cover and simmer for 30-35 minutes, or until the mutton is tender. Stir occasionally and adjust water if needed.
  6. Step 6: Meanwhile, in a separate pan, dry roast the ragi flour on low heat for 2 minutes. Gradually add boiling water while stirring continuously to form a smooth dough.
  7. Step 7: Divide the ragi dough into equal portions and shape into smooth, firm balls (muddes) using wet hands. Cover and set aside.
  8. Step 8: Blend the grated coconut with a little water into a smooth paste. Add this paste to the mutton curry and simmer for 5 minutes.
  9. Step 9: Garnish the curry with chopped coriander leaves. Serve hot with ragi mudde.
