Jain Style Vegetable Pulao with Paneer recipe

A flavorful and aromatic Jain-style vegetable pulao made with basmati rice, fresh vegetables, and soft paneer cubes, perfectly spiced for a satisfying lunch.

Ingredients

  • 200 g Paneer
  • - Bay Leaf
  • 150 Gms Cloves
  • 1 kg Basmati Rice
  • 200 g Green Peas
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Coriander Powder
  • 10G Salt
  • 500 g Ghee
  • 250g Coriander
  • 100 g Lemon

Instructions

  1. Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until aromatic.
  2. Step 2: Add the chopped green beans, carrots, and green peas. Stir-fry the vegetables for 3-4 minutes.
  3. Step 3: Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  4. Step 4: Drain the soaked basmati rice and add it to the pan. Gently mix the rice with the vegetables and spices.
  5. Step 5: Add 2 cups of water to the pan and bring it to a boil. Reduce the heat to low, cover with a lid, and simmer for 15-20 minutes until the rice is fully cooked.
  6. Step 6: In a separate pan, heat 1 tablespoon of ghee and lightly sauté the paneer cubes until golden on the edges. Add the paneer to the cooked pulao and mix gently.
  7. Step 7: Garnish the pulao with fresh coriander leaves and serve hot with lemon wedges on the side.
