A flavorful and aromatic Jain-style vegetable pulao made with basmati rice, fresh vegetables, and soft paneer cubes, perfectly spiced for a satisfying lunch.
Ingredients
- 200 g Paneer
- - Bay Leaf
- 150 Gms Cloves
- 1 kg Basmati Rice
- 200 g Green Peas
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 10G Salt
- 500 g Ghee
- 250g Coriander
- 100 g Lemon
Instructions
- Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until aromatic.
- Step 2: Add the chopped green beans, carrots, and green peas. Stir-fry the vegetables for 3-4 minutes.
- Step 3: Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Step 4: Drain the soaked basmati rice and add it to the pan. Gently mix the rice with the vegetables and spices.
- Step 5: Add 2 cups of water to the pan and bring it to a boil. Reduce the heat to low, cover with a lid, and simmer for 15-20 minutes until the rice is fully cooked.
- Step 6: In a separate pan, heat 1 tablespoon of ghee and lightly sauté the paneer cubes until golden on the edges. Add the paneer to the cooked pulao and mix gently.
- Step 7: Garnish the pulao with fresh coriander leaves and serve hot with lemon wedges on the side.
