A healthy, Jain-friendly twist on traditional khichdi made with quinoa, vegetables, and aromatic spices for a satisfying dinner.
Ingredients
- 100 g Quinoa
- 1 kg Yellow Moong Dal
- 250 g Carrot
- 250g Green Chilli
- 250g Ginger
- 250g Coriander
- 500 g Ghee
- 100 G Asafoetida / Hing 100 G
- 500 ml Water
- 20 g Turmeric Powder
- 10G Salt
Instructions
- Step 1: Heat ghee in a pressure cooker over medium heat. Add cumin seeds and let them splutter. Then add asafoetida, green chili, and grated ginger, sautéing for 30 seconds.
- Step 2: Add diced carrots, chopped green beans, and chopped tomato. Sauté for 2 minutes.
- Step 3: Add washed quinoa and yellow moong dal to the cooker. Stir well to combine with the vegetables.
- Step 4: Add turmeric powder, salt, and water. Mix everything thoroughly.
- Step 5: Close the pressure cooker lid and cook for 3 whistles on medium heat. Turn off the heat and let the pressure release naturally.
- Step 6: Once the pressure is released, open the lid and fluff the khichdi gently with a fork.
- Step 7: Garnish with fresh coriander leaves and serve hot.
