Ingredients

  • 100 g Quinoa
  • 1 kg Yellow Moong Dal
  • 250 g Carrot
  • 250g Green Chilli
  • 250g Ginger
  • 250g Coriander
  • 500 g Ghee
  • 100 G Asafoetida / Hing 100 G
  • 500 ml Water
  • 20 g Turmeric Powder
  • 10G Salt

Instructions

  1. Step 1: Heat ghee in a pressure cooker over medium heat. Add cumin seeds and let them splutter. Then add asafoetida, green chili, and grated ginger, sautéing for 30 seconds.
  2. Step 2: Add diced carrots, chopped green beans, and chopped tomato. Sauté for 2 minutes.
  3. Step 3: Add washed quinoa and yellow moong dal to the cooker. Stir well to combine with the vegetables.
  4. Step 4: Add turmeric powder, salt, and water. Mix everything thoroughly.
  5. Step 5: Close the pressure cooker lid and cook for 3 whistles on medium heat. Turn off the heat and let the pressure release naturally.
  6. Step 6: Once the pressure is released, open the lid and fluff the khichdi gently with a fork.
  7. Step 7: Garnish with fresh coriander leaves and serve hot.
