Ingredients

  • 500 g Poha
  • 100G Cashews
  • - Mustard Seeds
  • - Lemon Juice
  • 1 piece Coconut
  • 250g Green Chilli
  • 20G Curry Leaves
  • 20 g Turmeric Powder
  • 10G Salt
  • 500 G Sugar
  • 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
  • 250g Coriander

Instructions

  1. Heat 2 tablespoons of oil in a large pan on medium heat.
  2. Add mustard seeds and let them splutter, followed by curry leaves and chopped green chilies. Sauté for 30 seconds.
  3. Add turmeric powder and mix well.
  4. Add the washed and drained poha to the pan, gently mixing to coat it evenly with the spices.
  5. Sprinkle salt and sugar, and mix thoroughly to balance the flavors.
  6. Lower the heat and add grated coconut and roasted cashews. Stir gently to combine.
  7. Turn off the heat and garnish with chopped coriander leaves and freshly squeezed lemon juice.
  8. Serve warm with a side of green chutney or plain yogurt (optional).
