Ingredients
- 500 g Poha
- 100G Cashews
- - Mustard Seeds
- - Lemon Juice
- 1 piece Coconut
- 250g Green Chilli
- 20G Curry Leaves
- 20 g Turmeric Powder
- 10G Salt
- 500 G Sugar
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 250g Coriander
Instructions
- Heat 2 tablespoons of oil in a large pan on medium heat.
- Add mustard seeds and let them splutter, followed by curry leaves and chopped green chilies. Sauté for 30 seconds.
- Add turmeric powder and mix well.
- Add the washed and drained poha to the pan, gently mixing to coat it evenly with the spices.
- Sprinkle salt and sugar, and mix thoroughly to balance the flavors.
- Lower the heat and add grated coconut and roasted cashews. Stir gently to combine.
- Turn off the heat and garnish with chopped coriander leaves and freshly squeezed lemon juice.
- Serve warm with a side of green chutney or plain yogurt (optional).
