Ingredients
- 200 g Paneer
- 150 Gms Cloves
- - Bay Leaf
- 500 ml Water
- 100G Cashews
- 100G Raisins
- 1 kg Basmati Rice
- 200 g Green Peas
- 250 g Carrot
- 500 g Ghee
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 250g Green Chilli
- 300 g Ginger Paste
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100g Garam Masala
- 250g Coriander
- 10G Salt
Instructions
- Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, cloves, cinnamon stick, and bay leaf. Sauté until aromatic.
- Step 2: Add slit green chilies, ginger paste, and diced carrots. Cook for 2-3 minutes.
- Step 3: Add green peas and sauté for another minute. Then, add washed and soaked basmati rice. Stir gently to coat the rice with the spices.
- Step 4: Add 2 cups of water, turmeric powder, coriander powder, and salt to taste. Cover and cook on low heat until the rice is fully cooked and water is absorbed (about 15-20 minutes).
- Step 5: While the rice cooks, heat another tablespoon of ghee in a separate pan. Add paneer cubes and lightly sauté until golden. Sprinkle garam masala and a pinch of salt over the paneer. Mix well and set aside.
- Step 6: Once the rice is cooked, gently fluff it with a fork. Add roasted cashews, raisins, and freshly chopped coriander leaves. Mix gently to combine.
- Step 7: Serve the ghee pulao on a plate, topped with spiced paneer cubes. Garnish with additional coriander leaves if desired and enjoy!
