Ingredients

  • 200 g Paneer
  • 150 Gms Cloves
  • - Bay Leaf
  • 500 ml Water
  • 100G Cashews
  • 100G Raisins
  • 1 kg Basmati Rice
  • 200 g Green Peas
  • 250 g Carrot
  • 500 g Ghee
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 250g Green Chilli
  • 300 g Ginger Paste
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 100g Garam Masala
  • 250g Coriander
  • 10G Salt

Instructions

  1. Step 1: Heat 1 tablespoon of ghee in a deep pan. Add cumin seeds, cloves, cinnamon stick, and bay leaf. Sauté until aromatic.
  2. Step 2: Add slit green chilies, ginger paste, and diced carrots. Cook for 2-3 minutes.
  3. Step 3: Add green peas and sauté for another minute. Then, add washed and soaked basmati rice. Stir gently to coat the rice with the spices.
  4. Step 4: Add 2 cups of water, turmeric powder, coriander powder, and salt to taste. Cover and cook on low heat until the rice is fully cooked and water is absorbed (about 15-20 minutes).
  5. Step 5: While the rice cooks, heat another tablespoon of ghee in a separate pan. Add paneer cubes and lightly sauté until golden. Sprinkle garam masala and a pinch of salt over the paneer. Mix well and set aside.
  6. Step 6: Once the rice is cooked, gently fluff it with a fork. Add roasted cashews, raisins, and freshly chopped coriander leaves. Mix gently to combine.
  7. Step 7: Serve the ghee pulao on a plate, topped with spiced paneer cubes. Garnish with additional coriander leaves if desired and enjoy!
