Ingredients
- 200 g Green Peas
- 250 g Carrot
- 20G Curry Leaves
- - Red Chilli
- 100 g Quinoa
- 250 ml Coconut Milk
- - Mustard Seeds
- 1 kg Bell Peppers
- - Coconut Oil
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
- 250g Coriander
- 1 pc (200 g) Dabur Hommade Tomato Puree
Instructions
- Step 1: Heat coconut oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Add curry leaves and sauté for 30 seconds.
- Step 2: Add diced carrots, capsicum, and green peas to the pan. Stir and cook for 5 minutes until slightly tender.
- Step 3: Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for an additional 2 minutes.
- Step 4: Add the tomato puree and cook for 3 minutes until the mixture thickens slightly.
- Step 5: Add rinsed quinoa and 2 cups of water to the pan. Stir well, cover, and let it cook on low heat for 18–20 minutes, or until the quinoa is fully cooked and fluffy.
- Step 6: Stir in coconut milk and cook for 2 minutes to combine flavors.
- Step 7: Garnish with fresh coriander leaves and serve hot.
