High-Protein Vegetable Kootu With Red Rice Recipe

A hearty and nutritious South Indian kootu made with protein-rich lentils, mixed vegetables, and paired with wholesome red rice for a balanced, weight-gain dinner.
Ingredients
- 20G Curry Leaves
- - Grated Coconut
- 500 Gms Organic Red Rice
- 250 g Carrot
- 400-600 g Pumpkin
- 200 ml Sesame Oil
- 500 g Moong Dal
- 250 g French Beans
- - Mustard Seeds
- 100 G Asafoetida / Hing 100 G
- 20 g Turmeric Powder
- 10G Salt
- - Cumin Seed
Instructions
- Step 1: Cook the red rice in 2 cups of water over medium heat until tender, about 25-30 minutes. Set aside.
- Step 2: In a pressure cooker, combine moong dal, diced carrot, pumpkin, and green beans with 2 cups of water, turmeric, and salt. Pressure cook for 3 whistles and allow the pressure to release naturally.
- Step 3: Grind grated coconut, cumin seeds, and black peppercorns into a smooth paste using a small amount of water. Set aside.
- Step 4: Heat sesame oil in a pan and add mustard seeds. When they start spluttering, add curry leaves and asafoetida.
- Step 5: Add the cooked vegetable-dal mixture to the pan. Stir in the coconut paste and simmer for 5-7 minutes until flavors meld together.
- Step 6: Serve the vegetable kootu hot alongside the cooked red rice.
