High-Protein Vegetable Kootu with Red Rice recipe

Ingredients

  • 20G Curry Leaves
  • - Grated Coconut
  • 500 Gms Organic Red Rice
  • 250 g Carrot
  • 400-600 g Pumpkin
  • 200 ml Sesame Oil
  • 500 g Moong Dal
  • 250 g French Beans
  • - Mustard Seeds
  • 100 G Asafoetida / Hing 100 G
  • 20 g Turmeric Powder
  • 10G Salt
  • - Cumin Seed

Instructions

  1. Step 1: Cook the red rice in 2 cups of water over medium heat until tender, about 25-30 minutes. Set aside.
  2. Step 2: In a pressure cooker, combine moong dal, diced carrot, pumpkin, and green beans with 2 cups of water, turmeric, and salt. Pressure cook for 3 whistles and allow the pressure to release naturally.
  3. Step 3: Grind grated coconut, cumin seeds, and black peppercorns into a smooth paste using a small amount of water. Set aside.
  4. Step 4: Heat sesame oil in a pan and add mustard seeds. When they start spluttering, add curry leaves and asafoetida.
  5. Step 5: Add the cooked vegetable-dal mixture to the pan. Stir in the coconut paste and simmer for 5-7 minutes until flavors meld together.
  6. Step 6: Serve the vegetable kootu hot alongside the cooked red rice.
