- 2 pcs Zucchini
- 500 g Capsicum Green
- - Olive Oil
- 50 g Asafoetida Powder
- - Thyme Leaves
- 40G Primi Piatti Rosemary Flakes
- 100 g Sunflower Seeds Plain
- 500 g Tomato - Hybrid
- 50 g Black Pepper Powder
- 100 g Salt

Instructions
- 1. Rinse the green lentils thoroughly and cook them in a pot with enough water until tender, about 20-25 minutes. Drain and set aside.
- 2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the asafoetida, diced zucchini, and bell pepper. Sauté for 5-6 minutes until the vegetables are slightly softened.
- 3. Add the diced tomato, dried thyme, dried rosemary, black pepper, and salt to the pan. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
- 4. Stir in the cooked lentils and baby spinach leaves. Cook for 2-3 minutes until the spinach wilts and the lentils are well combined with the vegetables.
- 5. Remove the pan from heat and drizzle with the remaining olive oil and lemon juice. Toss gently to coat all ingredients evenly.
- 6. Transfer the mixture to serving bowls. Garnish with chopped fresh parsley and sunflower seeds if desired. Serve warm and enjoy your Herbed Lentil Provençal Breakfast Bowl.
