- 500 g Chicken Whole
- 500 g Tomato - Hybrid
- - Chilli Green 100 G
- 1 liter Sunflower Oil
- 100 g Coriander Leaves
- - Coriander Powder
- 100 g Curry Leaves
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Wash the chicken thoroughly and set aside. Rinse the gongura leaves under running water, drain, and chop them finely.
- 2. Heat 1 tablespoon of oil in a large pan over medium heat. Add mustard seeds and let them splutter, followed by cumin seeds and curry leaves. Stir for a few seconds until aromatic.
- 3. Add the chopped tomatoes and green chilies to the pan. Cook for 3-4 minutes until the tomatoes soften and release their juices.
- 4. Add the chopped gongura leaves to the pan. Sauté for 5-7 minutes on medium heat until the leaves wilt and their tangy flavor intensifies.
- 5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for an additional 2 minutes.
- 6. In a separate pan, heat the remaining 1 tablespoon of oil. Sear the chicken pieces on medium heat for 5-6 minutes until lightly browned.
- 7. Transfer the seared chicken into the pan with the gongura mixture. Mix well to coat the chicken with the spices and leaves.
- 8. Cover the pan and cook on low-medium heat for 25-30 minutes, stirring occasionally, until the chicken is tender and fully cooked. Add a splash of water during cooking if needed to prevent sticking.
- 9. Once the chicken is cooked and the flavors are well combined, garnish with freshly chopped coriander leaves.
- 10. Serve hot with steamed rice or roti for a complete and satisfying meal.
