A hearty and nutritious gluten-free khichdi made with protein-packed chana dal and amaranth grains, delicately spiced for a wholesome and comforting dinner.
Ingredients
- 500G Chana Dal
- 500 g Ghee
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 100 G Asafoetida / Hing 100 G
- 500 ml Water
- 250g Ginger
- 250g Green Chilli
- 250 g Carrot
- 200 g Green Peas
- 20G Curry Leaves
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat the ghee in the rice cooker on the sauté or high-heat setting, if available. Add cumin seeds and let them sizzle for a few seconds.
- Step 2: Stir in the asafoetida, turmeric powder, coriander powder, grated ginger, and green chilies. Sauté for about 1 minute until fragrant.
- Step 3: Add the diced carrot, green peas, and curry leaves. Cook for 2-3 minutes, stirring occasionally.
- Step 4: Drain the soaked chana dal and add it to the rice cooker. Stir well to coat the dal with the spices.
- Step 5: Add the rinsed amaranth grains and mix well. Pour in the 4 cups of water and add salt to taste.
- Step 6: Close the rice cooker and set it to the cooking mode. Let the khichdi cook until both the chana dal and amaranth are tender (around 30-35 minutes). Stir occasionally if your rice cooker allows.
- Step 7: Once cooked, open the lid and fluff gently. Garnish with chopped coriander leaves and serve warm.
