Ingredients

  • 100 g Coriander Leaves
  • 2 pcs Zucchini
  • 500 g Capsicum Green
  • 50 g Asafoetida Powder
  • 1 kg Yellow Moong Dal
  • - Rice Flour
  • 100 g Jeera
  • 20 g Turmeric Powder
  • - Red Chilli Powder
  • 100 g Salt
  • 1 liter Sunflower Oil

Instructions

  1. 1. Wash the moong dal thoroughly and soak it in water for 2 hours. Drain completely and grind into a coarse paste using a food processor, without adding water.
  2. 2. In a mixing bowl, combine the moong dal paste with rice flour, grated zucchini, chopped bell pepper, coriander leaves, cumin seeds, turmeric powder, red chili powder, asafoetida, and salt. Mix well to form a thick, moldable dough.
  3. 3. Divide the mixture into small portions and shape each portion into flat, round croquettes, about 2 inches in diameter.
  4. 4. Heat vegetable oil in a non-stick pan over medium heat. Once hot, fry the croquettes in batches, cooking each side for 3-4 minutes or until golden and crispy.
  5. 5. Remove the croquettes from the pan and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite vegan dipping sauce or chutney.
