A fragrant and mildly spiced Indian rice dish featuring soft paneer cubes, fresh vegetables, and aromatic spices, perfect for an advanced cook's hearty dinner.
Ingredients
- 200 g Paneer
- 1 kg Basmati Rice
- 200 g Green Peas
- - Bay Leaf
- 150 Gms Cloves
- - Cardamom
- - Onion
- 250g Green Chilli
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 100g Garam Masala
- 10G Salt
- 500 g Ghee
- 250g Coriander
Instructions
- Step 1: Heat 1 tablespoon of ghee in a deep pan. Add bay leaf, cloves, cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
- Step 2: Add the sliced onions and cook until golden brown. Stir in the ginger-garlic paste and green chilies. Sauté for 2 minutes.
- Step 3: Add the chopped carrots, green beans, and green peas. Cook for 3-4 minutes, stirring occasionally.
- Step 4: Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Step 5: Drain the soaked rice and add it to the pan. Stir gently to coat the rice with the spices.
- Step 6: Pour in 2 cups of water. Bring to a boil, then reduce the heat to low. Cover with a lid and cook for 12-15 minutes or until the rice is tender and water is absorbed.
- Step 7: While the rice cooks, heat the remaining 1 tablespoon of ghee in a small pan. Add the paneer cubes and lightly fry until golden on the edges. Set aside.
- Step 8: Once the rice is cooked, gently fluff it with a fork. Add the fried paneer cubes and garam masala. Mix gently.
- Step 9: Garnish with fresh coriander leaves and serve hot.
